
As summer days grow longer, and hotter, I am always searching for ways to have great cooked food without turning on my oven. As with most people the grill becomes the answer for my family on many a summer evening. This was true a few nights ago as we were having burgers. The local farmer’s market is a staple for us in the summer and fall, and as a result we had a large amount of veggies needing to be used. I usually roast my veggies, but due to the heat, and the grill already going to be used for the burgers we grilled them instead.
This proved to be a great choice they were great! This recipe is so easy only two things in it, and no prep what so ever so be sure to read very carefully
Ingredients:
Vegetables of your choice – cut (or not) to approximately the same size
Salad dressing (oil based) – for marinade
salt/pepper to taste
Preparation:
* Clean and prep your veggies, place in a large bowl or bag and pour enough dressing on to coat.
* Refrigerate for about an hour (or more).
* Grill until done, remember to keep turning them so they don’t burn!
