If there were a perfect food, avocados may be that food.  I love them, and there is no better way to eat them, in my opinion then in guacamole.  Guacamole gets made often in our house, and I never make it the same twice.  This recipe, using the term lightly, is the first style I learned from my mom.  I tend to get a little crazy sometimes and make it with just garlic, and salt and a squeeze of lemon juice, but then one has to ask if it is still guacamole or just mushed up seasoned avocado?

I know there are prettier guacamole’s out there, and ones using all fresh ingredients, but you must remember this girl grew up  in Wyoming, not a state well known for its availability of fresh produce all year.  So for this simple and easy recipe jarred salsa is used and not fresh tomatoes.  It is easy, and goes amazing with chips or any Mexican dish so enjoy!

Ingredients:

1 ripe avocado – smashed with fork

1/2 lemon – squeezed to release juice

2 Tbs onion – finely chopped

2 Tbs – sour cream

1 Tbs – mayonnaise

2 Tbs chunky salsa

salt to taste

Preparation:

* Super duper easy!! Mush the avocado, squeeze in the lemon juice, add all the other ingredients, stir to combine.

* Cover and refrigerate any leftovers.
