
Oh what to so with that pork you pulled out of the freezer, but didn’t use. This was my dilemma this week after the holiday weekend. I had pulled three huge packages of country style pork ribs ( the best cut of pork ever created!!), once they were thawed we only ended up using 2, so that left 1 lonely thawed package of pork. We had already grilled the previous ribs so I wanted something new to do with these. A friend suggested beer and sauerkraut which we also love, but seemed a little heavy for the summer, but it got the whole brain thinking. So I had tortillas and so tacos came to mind, so here is a 4 ingredient experiment that went totally awesome!!!
Ingredients:
2-3 lbs pork – cut into uniform size pieces
1 can beer – I had Guinness
1 onion diced
taco seasoning – make your own or I used pre made
Preparation:
This could not be easier!
* Place pork, onion in crock pot and stir.
* add seasoning, and then pour the beer over the meat.
* Cook on low 6-8 hrs – or high 4-5 hours
* Remove meat from the juice and shred using 2 forks, add some juice back in to get to desired juiciness!
