
This is one of those salads I so look foraward to throughout the long winter. I can’t wait for the green spinach to be super fresh, and the strawberries to go on sale and atually taste like strawberries! So when I was at the grocery store this week and saw the SALE sign on a big table of strawberries I got very excited.
The basis of this salad was at one point spinach, but as the years have gone on, and the accessibility to more varieties of greens has improved, I tend to make it with a variety of greens. Today it was baby spinach, arugala, and a handfull of mixed spring greens left over from out last salad. I have also used romaine in the past as well.
Ingredients:
Spinach and assorted greens
2 cups sliced strawberries
1/2 cucumber peeled and sliced
1/2 red onion thinly sliced
roasted pine nuts or almond slivers – optional ( I didn’t have any so I omitted them this time)
Preparation:
* Place all ingredients minus the nuts in a large bowl and toss. Serve with dressing on side and sprinkle nuts on top. Or dress entire salad just before serving.
Dressing:
1 cup veggie oil
3/4 cup sugar
1/2 cup red wine vinegar
2 cloves garlic minced
1/2 tsp salt
1/2 tsp paprika
1/4 tsp white pepper – I never have this so I use black pepper
* Place all ingredients in a jar or shaker bottle and shake.
