
This is one of those recipes that I always see in cookbooks or online that always look so good, and easy. Last night I had one head of broccoli and didn’t want to just steam it per my ususal so I did a quick look up of several tequniques and jumped in. This is the ingredient amounts for just 2-3 servings so adjust the amounts to the amount of broccoli you have.
Ingredients:
3 cups broccoli cut into florets
4Tbs. EVOO- extra virgin olive oil
salt/pepper
2 cloves garlic thinly sliced
1 Tbs lemon zest
2 Tbs lemon juice-I just squeezed juice from 1/2 of the lemon
grated parmasean cheese – I didn’t have fresh so just used good old Kraft in the can.
Preperation:
* Heat the oven up to 425 degrees.
*Place your broccoli and garlic on a baking sheet. Drizzle with the EVOO and season with salt and pepper.
* Bake for 20-25 mins, broccoli edges and the garlic will turn crispy and brown.
* Place in bowl and add zest, lemon juice and cheese, mix.
* Eat warm or room temp and it is delisious!!

I haven’t tried this recipe but plan to. I roasted cauliflower the other night the same way. It was pretty good, I think the roasting of the vegetables brings out a unique flavor.

Yum! I love roasted vegetables but have yet to try broccoli. I think it’s time I did!
Hope you enjoy it! I’m going to try cauilflower tonight with feta cheese and red peppers along with the garlic! Except instead of lemon juice going to use balsamic. My mouth just started watering
